Ingredients for Portuguese Rice Pudding
160 g risotto rice
1 l of milk
500 ml cream
75 g sugar
1 cinnamon stick
½ vanilla pod
Preperation
Boil the rice for 30 seconds. Filter. Set aside.
Heat the rest of the ingredients together. When it boils, add the rice and cook over a low heat for about 25 minutes, stirring regularly. Leave to cool quietly, the rice will finish absorbing the liquid.
You can serve it with a caramel sauce, or a drizzle of boiled condensed milk and pieces of cookie, to give it different textures.
